Farm to Table Berkshire Program

Some of the finest examples of our traditional recipes are those produced using Berkshire pork.  The two Berkshire products we took to IFFA both won Gold!  These and other 'Special Editions' will be available online for the first time during the 2025 Christmas Season.

Berkshire pork is often compared to Wagyu beef.  Bavaria Sausage and its wholesale partner Lindsay Foods source the finest Berkshire available through McKenna Farms Premium Pork.  'Farmer Joe' McKenna doesn't use antibiotics, steroids or hormones with his animals.  He grows his own crops rejecting genetically modified seed stock.  We admire every part of his authentic, traditional farm, stock and practices.  

McKenna Farms and Bavaria Sausage are proud to offer you some of the finest versions of our traditional, old-world recipes (this list will evolve over time):

'Berkschweiger' is shorthand for our traditional Braunschweiger recipe using Berkshire instead of commercial pork. The result is creamier and less gamey/metallic, but unmistakably delicious.

'Berkies' is our nickname for the Berkshire version of our traditional smoked brat recipe.  Mentioned by Pam "The Fabulous Farm Babe" on her broadcast they're a little richer than our everyday version.

Bauernschinken translates to 'farmer's ham'.  Ours is a boneless deli ham prepared by an old-world craftsman using ancient techniques.  Thinly sliced, think of it as a less dried prosciutto alternative on a charcuterie board.  Have it cut thick for a great sandwich.  A recent wine tasting group found it appropriate, interesting with cold sweeter gewurztraminer, cellar temp Bordeaux and 'big' American Reds.

Bavaria's Bone-in Berkshire Ham is our own ham preparation.  Serve it as you would any bone-in ham and truly appreciate the richness of Berkshire pork.  It's rich and complex without being overly salty or smoky.
