Venison Processing Info

We have some basic requirements we ask everyone bringing in venison to follow to ensure we can make a quality product:

  • Please bring in frozen venison, in Ziploc or other sealable bags.
    • While we prefer whole pieces of Venison, we do still accept ground Venison. It is ground again along with the rest of the meat at the beginning of our process.
    • Please do not bring in venison in scented garbage bags, ice cream pails, 5-gallon buckets, or other containers.
  • You must bring in at least 10.0 pounds of venison to start an order.
  • We supplement venison 1:1 with a beef/pork mixture, and a 10% shrink is applied to give a total yield of approximately 1.8x the amount you bring in. 
  • We process orders in the order we receive them; as such, we cannot combine multiple orders into one larger order. 
  • We cannot supplement orders with additional venison, or with additional or customer-specific beef/pork mixtures.
  • Please ensure your venison is trimmed, boneless, skinless, and free of excess fat.
    • Bavaria Sausage is NOT a locker plant. We cannot process whole deer.
  • Do not ship us your venison to be processed. We cannot accept meat that gets shipped to us.
    • We no longer offer outbound shipping of custom processed items.
  • If you are awaiting CWD results, please do not bring in your venison until you receive a negative confirmation.

 

In addition, please note the following:

  • We no longer custom process game other than venison. We cannot custom process elk, moose, lion, tiger, bear, Sasquatch, Ewok, or other meat. 
  • Please see Fish & Waterfowl Processing at the bottom of this page for information regarding wild game smoking.
  • We batch process venison in 200-pound+ batches, which means you will not receive your own meat back.
  • Order turnaround time varies significantly, and can range from weeks to months (typically falling into the 3-month range.) 
    • We will notify you when your order is ready; please do not call to ask about the status of your order. 
    • Please ensure you give us correct information, including phone number(s), email address, and home address. Otherwise, we can't contact you!
  • We will take in venison year-round, but typically stop processing orders from around the end of August to the start of the next calendar year.
    • Autumn into winter is our busiest time of year for our products- we pause venison production during this time.

 

Venison Product Overview


Pricing varies depending on product; we can give you more specific pricing when you are in the store dropping off your venison.

Please do not call to ask about pricing.

Hamburger: Versatile ground mix, typically 1# chubs.

Summer Sausages: We offer several varieties of summer sausage, including regular (formerly known as "Deluxe Summer Sausage,") garlic, pepper (formerly known as "Pepperwurst" or Pfefferwurst,") or cheddar. Typically 18-20oz per piece.

Bratwurst: Several varieties available! Precooked and ready to grill- regular, Italian, Smoked, and Polish. Usually 5:1#

Old-fashioned Wieners: Snappy natural casing venison wieners. Usually 8-10:1#

Ring Bologna: Typically about 12oz per piece.

Liver Sausage: Typically 1# chubs. Creamy, smooth liver sausage made with venison.

Old-fashioned Summer Sausage: Natural casing summer sausage with a string attached to hang to dry! Approx. 1# per piece.

Mustard Wheel: Formerly "Double Smoked Honey Wheels" or "Hot Wheels," this is a thick summer sausage slice slathered with mustard and peppercorns. Great to slice and share! approx. 10oz per piece.

Landjagers: Available in regular or pepper. Landjagers must be ordered in 10# boxes. One 10-pound box yields 50 pairs.

 

Fish & Waterfowl Processing

In addition to custom venison processing, we also offer smoking of your own wild game. Similar rules to venison processing apply; please note the following:

  • Please bring in your game in a resealable bag.
  • There is not a poundage minimum for wild game smoking. 
  • At the time we receive your game, we will need information regarding how you would like the end product packaged (i.e. "one fish per package," "filet and package individually," etc.)
  • Timelines vary for game smoking depending on our production schedule; we will call you when your order is ready. Please do not call us to ask about the status of your order.
