Old Fashioned Natural Casing Summer Sausage

This is an old-time favorite! Very lean beef and natural spices stuffed into a natural casing, then natural hickory smoked.  Let it hang in a cool place or let lay loose in the refrigerator. This sausage will age naturally - as hard as you like it - this allows the great seasonings and spices to come full flavor! 

This is a very lean sausage.  1 to 1.25 lbs.
